- ½ cup sugar
- 2 tablespoons cornstarch
- ¼ cup water
- 2 cups Parks Blueberries
- 1 tablespoon lemon juice
Oatmeal Crust and Topping:
- 1-½ cups oats ( regular or instant)
- 1 cup all purpose flour
- ¾ cup packed brown sugar
- 1-½ teaspoons Baking powder
- pinch salt
- 1 cup butter or margarine
Berry Layer: In a medium saucepan, stir the sugar and cornstarch together. Mix in the water, blueberries and lemon juice. Bring to a boil over medium heat, stirring. Reduce heat and simmer, stirring until thickened, about 5 minutes.
Oatmeal Layers: Preheat oven to 350 F. grease an 8” square baking pan. In a large bowl, stir together oats, flour, brown sugar, baking powder and salt. Drizzle with the melted butter and toss with a fork until well combined. Press half of this mixture into the baking pan. Cover with berry mixture. Sprinkle with the remaining oat mixture.
Bake for 40-45 minutes or until golden and bubbly.
